Huevos rotos con gambones al ajillo

Necesitaremos:
- 4 patatas medianas
- Aceite de oliva virgen extra
- 200 gr. de gambones pelados
- 2 dientes de ajo
- 1 cucharadita de pimentón dulce
- 2 huevos
- Sal
- Perejil fresco
Preparación:
Pelamos las patatas y las cortamos en rodajas. Freímos en abundante aceite a fuego medio hasta que estén tiernas y después subimos la temperatura para que se pongan crujientes.
Mientras tanto, en otra sartén, con un fondo de aceite añadimos los ajos en láminas y una cucharadita de pimentón, calentamos un poco y añadimos los gambones durante unos minutos.
Una vez que las patatas estén fritas las sacaremos y dejamos escurrir sobre papel absorbente.
Freímos dos huevos en el mismo aceite y montamos el plato.
Primero las patatas, encima los gambones, y por último los huevos. Decoramos con un poco de perejil picado y a disfrutar.
